Make sure your eggs are really fresh. +. Add a small dash of vinegar to a pan of steadily simmering water. +. Crack eggs individually into a ramekin or cup. +. Create a gentle whirlpool in the water to help the egg white wrap around the yolk. +. Slowly tip the egg into the water, white first. Leave to cook for three minutes. +. Remove with a slotted spoon, cutting off any wispy edges using the edge of the spoon. +. Drain (not for long ) onto kitchen paper โ nobody wants eggy poaching water making their toast soggy or wilting their salad. Cripes!!!!! All round to dappy's with paper under arm & coffee this sunday morning??
Ps never done the whirlpool shit but water has def gotta be just bubblin' else you just end up with a horrid mess and pangs of guilt / failure.

Use an electric rice cooker if you have one. use extra Mirin to place on your fingers when handling the rice. You also need to add sugar and salt, and get quantities right. Cooking very good sushi is very time consuming and not as easy as people think.

Never tried the sushi but I like to do a Chinese chilli beef and egg rice etc

Advice on cooking, by Deleted on Jan 15, 2015 22:34:15 GMT 1, Each to their own. Personally I don't use a rice cooker, or much kitchen paraphernalia, but have learnt to listen to a covered pan. I am led to believe that many Japanese now use these though.
I find making good sushi very time consuming, it can take up the best part of a day, and anything gets easier with practice.
I just think there is more to it than people who have not practiced making sushi, may initially realize.
Just my opinion.
Now I'm off to Tesco's to raid the booze aisle.
