Well, I've no doubt that you'll experience a difference in sound from your headphones after prolonged listening, providing your hearing is sensitive enough. However, I think that the main reason for this is that you'll become accustomed to the way your headphones are tuned and will therefore perceive the sound differently, rather than the measured sound actually changing significantly. Indeed, the scientific evidence of the actual sound of headphones changing after an initial break-in period is inconclusive. And manufacturers seem split on the subject, as is the audiophile community.
That said, I've no doubt mechanical wear over time (as parts degrade) can significantly impact sound (generally getting worse, but in some cases the change can be for the better). Though I wouldn't class mechanical "wear", as break-in. You should be getting many years use out of a pair of cans before they start to wear.
With the above in mind, I would start with the assumption that what you get out of the box is going to be pretty close to the sound you'll ultimately end up with. So, if you really don't get on with the headphones on a first listen, the likelihood is that they aren't the headphones for you. Notwithstanding the fact that the other elements in your system (music, format, source, etc) will all also have a significant impact on the sound. So, it could theoretically be one of the other elements which actually needs changing.

That looks good, but sounds awful. What brands are the ones to look for and trust? I've got about 5 pairs of headphones ranging in price from about ยฃ150-1,500. It really depends on what you're using them for and also very importantly how you drive them. If you want a decent affordable pair that sound good with most headphone amps then I'd recommend the Senheiser HD25, they've been a staple for DJs, television and radio for 20+ years and are around ยฃ100-150 depending on the cabling, they're to headphones what the SM58 is to mics. They're wired headphones, so if you're looking for wireless I'd actually recommend the Apple Airpod Pro Max, was really surprised at the quality of these, they're not intended for critical or studio applications but are great for casual listening and have a stack of headroom for wireless, they look great and are very comfortable, little more expensive but you can get a refurbished pair for about ยฃ350. If you want high end audiophile cans then probably the Audeze LCDX are my pick, they are mastering grade headphones used by the pros so are priced accordingly, the headphones themselves are about ยฃ1,000 however because they are planar headphones they need a decent headphone amp to drive them, which can set you back another grand+ easily. These are probably overkill unless you're a professional.

I also like the aiaiai TMA range, they are modular and can be configured for style of listening, and if one part goes out, you can just replace it vs replacing the whole thing.

The pro version with the split headband is too tight for long sessions imo.
