I presumed this is actually just a unique serial number allocated to each print/COA.
it’s just the iPhone automatically assumes it’s a telephone number.

Yes. I've had them contact the previous owner and me to confirm. Once completed, I received an email with the details of the print stating "The checks are complete. You are the current registered owner for the above work."
That's as at 2019.
