My Wife and I are looking for a pink donut. I just had a deal fall through from a gallery, they quoted a price we agreed the deal only for them to call me back two hrs later asking for 20% more money. This has left a very bad taste in my mouth.

For the benefit of others, could you disclose which gallery you dealt with?
That is the kind of thing I detest.
After the handshake (whether in person or virtual), neither side should pull out. But it's always worse when it's done by a business, the so-called professional in the transaction.
Consider also adding details of your experience to the 'Not So Good Dealings With:' thead:

The gallery that upped the price after we'd agreed the deal was London westbank gallery, I was dealing with Tommy one of the owners. Like you say once the deal is agreed you don't come back asking for more money it's unprofessional. I've been buying art for years had some miss quotes but the other party has always made sure to honor the original pricing it's the right thing to do. I explained all this to him but his attitude was what really annoyed me it was basically this is it, he apologised but what goods and apology? At the end of the day it's your reputation and honor that count he had none.

No one will look out for your piece better than yourself. Ask as many questions as possible and definitely get solid recommendations before taking to someone. Sorry to hear about your incident ...
