At the very least, they sell the data to galleries (or anyone who's willing to pay, I guess). Not sure why they wouldn't want the gavel price to be puplic as big sales make others want to sell theirs. All the big hoises leave there prices up.

Artprice.com publishes auction results and has had some legal issues for doing so.
There are also allegations that auctions are working together to fix manipulate prices and do not want the data made public.
