Aside from that, does it really matter? If you are looking to buy or sell GDP pieces when the COA's are received (after you have applied for them) the market will dictate the price.

The Valuer said they thought it was worth the same as the unsigned unlimited cushions ? Anyway I’ve insured it for £40k

I read here that the VIP price for the rat clock was £40-50k. So probably you'd want to insure it for an order of magnitude more...

Some of those prices were very very low compared to what is currently being sold direct.

If you are insuring for replacement value - which you probably should, in my view, you will not be able to replace it at £40k.
I would ask your insurer what they would accept as a valuation (this varies from insurer to insurer) especially when there are few public benchmarks. This may involve paying one of their preferred valuers to come up with an estimate, which given the value of the work - I would also think worthwhile.
Otherwise there may be a potential issue down the line if you value it too high / too low.
