Of course nothing beats sitting in your favourite chair with your favourite red wine listening to your favourite song whilst looking at favourite piece of art...... ;D ;D

I like pulling Kittens heads off., by Deleted on Dec 18, 2007 21:19:33 GMT 1, I used to work in a few kitchens. I like my prime rib.
1 4 - 5 beef rib roast handful of rosemary, parsley and thyme (roughly chopped) 1/2 cup olive oil salt/pepper 1/2 lemon 1 roasted head of garlic 1 head of raw garlic any old veggies in your fridge...preferably celery, onion, carrots in the mix
chop veggies and put in the roasting pan
make slits in roast and place whole garlic cloves inside at varioud places.
make a paste out of the herbs, oil, salt, pepper and roasted garlic (it should be pasty anyway) and liberally spread around the roast.
place roast on bed of veggies (ideally you'd have a roasting rack but doesn't matter too much)
uncovered cook at a temp of 450 degrees for 15 minutes, and drop to 350 and cook in covered foil until internal temp reaches 120 - 130 depending on personal preference
when you take it out let it rest for 15 - 30 mins. with the pan drippings make a simple sauce by straining the veggies, returning to heat and adding some stock, butter and maybe white wine. let it reduce to about 1/2 it's volume.

You then use this for the base of the baked rice by putting this into a buttered ovenproof dish. Then get a can of tomatoes and puree & mix with breadcrumbs and cheese, spread this over the rice then bake for about 25 minutes when the top will be browned.

I agree - I love talking about Art - but that's all Ive done lately, so it's nice to indulge another interest - a change is as good as a rest as they say.
