It's all about dry-frying cumin seed and fennel seed, then adding oil and frying the onion. Awesome, plus you can smell it cooking several streets away.

I made a proper curry once - curry leaves the lot - couldn't get the bloody smell out of my hall for about 3 months.
Was lovely though ;D

I like pulling Kittens heads off., by ray on Dec 18, 2007 20:53:10 GMT 1, Without a doubt toast. I even collect antique toasters. For anyone curious how toast becomes brown I offer the following:
"A toaster works by applying radiant heat directly to a bread slice. When the bread's surface temperature reaches about 310 degrees Farenheit, a chemical change known as the Maillard reaction begins. Sugars and starches start to caramelize - turn brown - and to take on intense flavors.
"That's toast.
"With more heating, the sugars and underlying grain fibers start turning into carbon.
"That's burnt toast."

I'm just eating my Thai Green Curry - and it's very very nice.
If anyone would like the Recipe - buy Nigel Slaters 'Real Food' - it's in there.
In fact, buy his cookbooks - he has a way of talking about food that is just incredible. Truly a man who loves what he eats. It's inspirational.

I was wondering about this the other day (Im such a boring f*cker) - why are they called 'baby-back' ribs? Are they from baby pigs?

Sounds good to me, I'm veggie too.
For when guests come round I'll normally cook Mexican, either Red Beans in Tomato Sauce, or Avocado & Cheese in tortillas served with baked Brazilian rice. It's very good for get togethers as you can make it all before hand and just stick it in the oven, cheap too, and because you can make a lot of it some can go in the freezer.
recipes from Latin American Vegetarian Cookery www.amazon.co.uk/Latin-American-Vegetarian-Cookery-David/dp/0712659609/
Synopsis Provides over 120 recipes from Mexico, Belize, Guatemala, Peru, Nicaragua and other Latin American countries. The collection is rich in fruits and spices, including chilli-based dishes, and a wide range of recipes based on grains, beans and corn. By the author of "The Penniless Vegetarian".
When we've finished eating we can then enjoy pulling Kittens heads off with full stomachs ;D

It's a kind of shaven rice ;D
Actually it's long grain rice that's fried raw for 10 minutes over a low heat with olive oil & thinly sliced onion. Then add 2 skinned chopped tomatoes and water and cook covered for around 20 minutes until all the water has evaporated. You then use this for the base of the baked rice by putting this into a buttered ovenproof dish. Then get a can of tomatoes and puree & mix with breadcrumbs and cheese, spread this over the rice then bake for about 25 minutes when the top will be browned.
