Working on a new stencil, which is much more complicated than previous one's I've made... just curious if anybody has any tips on doing eyes? One of the eyes happens to be an "island".. is it best to just make another layer of the same color, or is there another way to do it that I haven't learned yet?

First way would be to cut in a bridge, i.e. a bit joining the island to the main stencil. If a single layer style stencil, the trick is to design it in such as way as to include the bridges as part of the image, so they don't stand out. If a multilayer image, then a following layer can be designed to cover up the join with the next layer of paint. Although this only works if you use layers of solid colour, unlike myself, who usually uses finer almost transparent layers.
Second way, as you said, would just be to use multiple layers, can be designed in a variety of ways, but make sure you cut in registration marks on the layers in the same place so you can line them up easily. Also sometimes the second layer of colour won't perfectly match the previous layer because of colour underneath, or canvas texture, can be annoying if you're a perfectionist.
Third little trick, if you really want to avoid the bridges, and also avoid multiple layers, is to use a raised bridge. This can be done a few ways, but basically superglue a bit of stiff picture wire, like an actual curved bridge, holding the island in place before you cut it and isolate that bit. This is a bit fiddly, and i've not used this method in years since i've got a bit better at actually designing the stencil... but it's an option.
