However for a buyer they provide a level of security that what you are buying is the real deal in a marketplace rammed full of fakes.

Fair enough, I guess high end dealers that are legit may be ok but I got my assumption from all the hungry flippers.

I feel like with all of the tools you have at your own disposal, a gallery can do a lot less nowadays re: providing extra security for something like this (outside of maybe a false sense).
If you use a secure payment method that describes the transaction/item in detail, and check the COA with the artist, then you really should have most of your bases covered. This is probably what a gallery would do anyway. Maybe research the seller too.
A lot harder for someone to cut and run with thousands of pounds in the era of the internet/Paypal.
The only real concern is mutual mistake, and a gallery can't do much to protect against this by nature. So yeah, I'd maybe buy from a gallery if the price difference was insignificant since it still feels nice, but I doubt I'd be paying thousands extra for the benefit.
