I have had a lot of people tell me they'd rather have me pay as gift as it removes the fees - but there must be something I'm missing here.

Also paying for an item as a gift means that if the item comes to you damaged or not at all. You probably can't get a Paypal refund.
If you do it the correct way then you are covered.
