Aside from that and the fairly common knowledge about the success rates of coffee businesses in a broader context, I suppose there is the outside chance that he's having everyone on.
But then there's my own experience and I can safely say that my salary is currently less than even his.

At the end of the day — of course it's possible to turn a profit, and in some cases, a decent profit with a coffee business, and like any business, there are things he is doing that could probably be improved, however it should probably be quite clear that it really isn't a money printing business.

Not being in the coffee business but knowing a little bit about things i would guess he could buy cheaper coffee, though perhaps he wants the freedom to buy from where he wants rather than a big Corp
Perhaps he wants to Support the little independent growers rather than the slave amazon corp type growers.
I wouldn't imagine the guy has an office with a procurement team in it.
Also being a shop and actually employing staff and paying holiday pay etc has to be admired

The procurement team comment was tongue in cheek. I’d guess the owner has full control on spends.
I’m not a coffee drinker or a business owner so opinion on this is worth very little, but if you look at the above link I posted they are doing exactly what you describe. Local independents roasting the coffee in the centre of Bristol that they bring back.

Plus the dreaded coffe shop crowd that take over and put other customers off can be detrimental, plus the hippies who sit in a cafe all day with their lap top and make a cup of coffee last four hours whilst pretending to write a film script on their lap top can make working there very unexciting.
But on the positive side, it's a cash business and on a good day the turnover can add up.
I think about having an artist paint the wall is a lot to do with what you can do for the artist in exchange for them doing the wall for you.
Maybe hire a hippy to make constant remarks at peak tmes about the art and hand out flyers to customers.
Or even have the artist or (artists as would try to have a few artists paint the big wall as a colab which means less work for each artist and an interesting wall) who paints the wall design your coffee cups which you get printed which become collectors items and ergo flipped on this forum.
